Christmas Stilton & Chicken Roulade Recipe

Tony Blake, former chef and now Commercial Director here at Q Catering, has created a recipe for Christmas Stilton & Chicken Roulade made with our Fresh Chicken Fillets. The Christmas Stilton & Chicken Roulade is an elegant and flavourful dish, perfect for festive gatherings.


Tender chicken breasts are filled with a luxurious blend of creamy Stilton cheese, spinach, and fragrant herbs. Once rolled into a delicate roulade, each piece is wrapped in prosciutto, adding a rich, smoky flavour. Baked until golden and juicy, the roulades are then sliced to reveal the beautiful, festive filling inside. This dish pairs wonderfully with roasted vegetables and a drizzle of tangy cranberry sauce, offering a sophisticated yet comforting Christmas meal.



Ingredients

Cooking Instructions

Trim, butterfly, and lightly pound chicken to 5mm thickness. Lay prosciutto slices on cling film, and place chicken on top. Season, add spinach, cranberry sauce, cranberries, and stilton. Roll chicken in cling film, twist ends, and rest for 2 hours. Heat oil and butter, seal chicken for 1-2 mins and add fresh sage leaves. Place in the oven at 170°C for 10-15 mins, and rest for 5 mins. Remove excess oil, add chopped shallots and sage, season, add port and reduce. Pour in chicken jus, reduce, add a splash of cream, sieve, and finish with a couple of knobs of butter. Slice the chicken and serve.
