Hidden veg spaghetti

Step 1:
Finely dice all your veggies into small cubes and place in a bowl
Step 2:
Heat oil in a large frying pan and add your veggies and cook for 3-5 minutes until softened
Step 3:
Add your chopped tomatoes, cover and then simmer for 10 minutes
Step 4:
While sauce is simmering, hat a pot of salted water until boiling then add your spaghetti
Step 5:
Once sauce is done simmering, remove from heat and tip into a container or blender and proceed to blend sauce until smooth
Step 6:
Once spaghetti is cooked al-dente, remove from water and add to pan with a splash of your sauce
Step 7:
Mix to combine, and once combined add a more sauce and stir
Step 8:
Serve immediately with your choice of cheese and garnish
